Rick Spector was a part of the team that opened The Eatery in January. The food hall takes up 10,000 square feet on the ground floor of One Metropolitan Square in downtown St. Louis. Three dining options are open and one more is on the way. Rick talks about the difficulties of putting multiple restaurants in an office building and the importance of getting the right mix of food types.
